Smithfield Beef Tenderloin, Salty

Picked up a small [only about 1 1/2 lbs] beef tenderloin at Kroger. It was packaged by Smithfield. I thought a small loin like that would be really good for just two people. I seasoned it with CharCrust Peppercorn Ranch, which I like a lot for beef roasts.
The resulting cook was very, very salty. Then I remembered the post a few weeks ago about Smithfield Pre-packaged ribs being overly salty. Apparently this also applies to any beef they sell

Of Course, like any Tenderloin, it was two pieces

Small enough to cook by just searing with a couple of flips

Cooked to 125 internal

It was very tasty [a little overdone] served up with some terrific corn and tomatoes we picked up from a roadside stand.
Just a reminder, it it says Smithfield on the package, it will likely be loaded with salt.

Well I hate that and I guess I forgot about the warning. I guess you just have to chock that one up as a learning experience. I'm sure you will make up for it next time you get a chance. Tim

I would cook these again, they were tender and tasty, but next time I will use Black Pepper and Garlic only, no rub that contains any additional salt.
I hope Smithfield wakes up and realizes they can't market everything like it is Country Ham :P
