Whole Turkey Breast Cooking Temp???

JB,[p]I cook turkey, whole or just breasts, in a v-rack indirect at 340° until the breast internal temp is 160°. I also put a drip pan on the the platesetter half filled with a mixture of apple juice or apple cider and water. I also spray the bird with apple juice about every hour while it cooks. If you want to add wood chunks, I suggest using the fruit woods - apple, cherry, etc. Pecan is also nice. Don't use more than two chunks. I usually only use one. Before cooking, separate the skin from the meat and rub with olive oil or butter and your favorite rub. Do the same to the outside of the skin. I've found that they take between 12 and 20 minutes per pound. If your bird gets done early, wrap it in tin foil and a towel and put it in a cooler. Let it rest uncovered for about fifteen minutes before carving.[p]Have fun with your bird.[p]Paul
