My first pickled cucumbers. I put these together Saturday.

Crisp to the bite. Tangy, spicy, garlicy and perfect. I ran out of the called for cidar vin and added rice and balsamic to finish. Can't wait!
It's raining like the dickens here!! Really nice to cool things down!!

Oh, please, peace on some levels. I grew up in the resaraunt biz. Full of alcoholics, crackheads,dumb a**'S, sailors, and people that just ain't right. I can hold my own.

Here you go. this is from Fonia, aka Jason.
24 cucumbers (I assume 24 spears)
Fresh Dill
1-thinly sliced white onion
12 cloves garlic
red chilis (to taste)
place peppercorns
3 C water
3 C Cider Vinegar
1/4 C Kosher Salt
1/2 C Sugar
Bring everything to boil and then pour over spears in jar. Let set a few days to pickle/cure.
Again, I changed this up a bit. Added a bunch more heat, garlic and love.

The ONLY difference in a Kosher Dill and a Polish Dill is you add a hot pepper and a clove of garlic to the P.D. Spears or slices do not matter.
I waterbath all mine so I do not have to refridgerate.Soaking them in pickling lime water helps keep the crunch.You can use Ball Pickle Crisp granules and skip this step.The refridgerator pickles are crispier but I don'T have 20 refridgerators to devote to them. -

Molly we gave up on cucumbers as they all ways burned up before they made. My Dad 8 miles away grows them like crazy. Go figure. Looks like you got the pickels down first time. Thought I would tell you we may be cancelling or putting the trip off. Little Bit is not doing well at all. Afraid her kidneys have failed. Took her to vet yesterday. We will see. Not a real good week down hear. :(

those look awesome. may have to try to make my own pickles. it's really near impossible to buy a good fresh pickle, at least in south mississippi.
