You can easily separate the skin from the bird so that you can slide your hands and/or fingers under the skin to add most anything you want. Alton Brown makes a paste of lemon zest, peppercorns, garlic, salt and olive oil to spread under the skin in his episode, "A Bird In The Pan".[p]TNW
