turkey breast - from so simple to sublime

Mr Egg is working his magic on a 7# turkey breast which I brined for 24 hr in an easy solution of 1 cup kosher salt and 1 cup of brown sugar in one gallon of water. Floated that breast in a sealed plastic bag while it was suspended inside an ice chest filled with water kept cold with ice - that way the brine essentially engulfed the whole breast with no flat spots anywhere. Apple wood chips are doing their flavor enhancing magic too.
