Cherry Pie

Thought I'd take a few pics and share some pie with you.

Setup is indirect with plate setter and spacers under pie pan, Baker egg at 425 degrees. This is about the halfway point where I checked to see how things are going. Sometimes the pie will bubble over, not this time.

Got up early this mornin, ground some Sumatran beans and did a French press java. Proceeded to the pie, sliced a nice piece out, scooped on some good ol vanilla ice cream and I had breakfast made. Yummmmm, sweet-tart and wonderful.

I have been using BGE lump. After doing some fruit on the grill, I am afraid to bake anything uncovered as everything seems to come out too grilled and have a fine coating of "ash" or something. What is your secret?
-
I use Grove Hardwood Lump charcoal, burns clean, light pleasant aroma, excellent for breads/pizza/cake/pie. So clean that this pie does not have any charcoal flavor, none at all. I've tried other brands of lump and Grove is my favorite.
Recommend you let your egg burn for an hour at 400 before you bake anything, this will help. BGE lump has a stronger charcoal aroma. Try Royal Oak for baking, find it at Walmart.
Good luck! -
Clay I just woke up tp this & now my breakfast doesn't look that great.. :( That tart looks delicious!!

Hi Adult ADHD
Sounds like you are not letting your fire "start" long enough and that you might be putting foods on to soon. BGE lump is Royal Oak and should burn as clean as any of them. If the gasses are clean coming out the top of the egg then your food should be clean also.
Have a great day,
Gator

Well glad you enjoyed the pics, food for the eyes I guess and no harm done.

Clay, I thought I had mistakenly switched over to the Bon Apetite web site. But then confirmed it was your post on second glance.
You're posts are too much! The only thing saving me from this post is that I have two peach pies that just came out of the oven. Your photography does your gorgeous cherry pie justice!

Two peach pies!! :woohoo:
Your kitchen must smell wonderful!
But you could have baked them in the egg.
Can't wait to cook with you again, next time I'll cook at the afterparty instead of just eating and drinking. :S You are the MASTER of the Flame! Wish I had brought my camera.... -
Thanks Molly!
Captured and eaten.

Very, very nice. You put a lot of effort into this. I made a lazy man's blueberry pie, but didn't look as good as yours. Nice job.
-
Wow! What a thing of beauty.
-
Awesome... I haven't made pie in a while - I think I need to make one of these!
I'm usually a "autumn pie" maker... things like pumpkin, apple, sweet potato... never made a cherry pie yet.
