both sides of this argument sound a little childish.
This forum has been one of the most educational, informative, entertaining ones I have ever participated on. It has some of the greatest people I have ever commuitcated with and up til now vertually has never had much argueing. Tweev=tip, I don't know how much experience you have had but when someone on this forum offers information, I seriously consider it even if I don't believe it. I think that you have but your :S comeback was too concretely against what some with experience were saying. Too many were taking the same stance against what you were so adamant about. Too many to not seriously consider what they were saying.
Now for the other side, WessB, your comments were a little hostile and not understanding. I have noticed it coming from you before on other posts. Kinda like you might be an old curmudgen
That said, many of us, myself included, sometimes put an inflection into what we write that is misinterperted by those reading it and it does not really reflect our personalities.
Why does anybody have to apologige, be friends and learn from each other. I am sure that some of my ideas are assbackwards from others but how do I change my position if even a hint of hostility shows, I become defensive which I feel is what happened here.
Each of us pop a beer or other beverage and toast to each other instead of apologizing and what we can learn if we go about it in the right way. -

It is entirely possible that the hydrolysis of collagen to gelatin is an endothermic reaction ie. one in which the end products hold more chemical energy than the starting products, resulting in a loss of heat from the system. If the transfer of heat from the Egg into the meat is slower than the transfer of heat into the end products of the hydrolysis then you would get a cooling effect. Whether your see this effect or not would be entirely dependent on where the probe is located and the rate of heat transfer through the meat.

All I can say in my own defense is Tweev brought on all the negativity I am posting towards him..this entire thread is a litteral example...he was proven wrong, but wont admit it, yet he still thinks he's correct in advising new egg owners on how to cook incorrectly...no experience, no sense...but yet stands here and argues with respectable and experienced eggers...the dude needs an appointment with a therapist..and he's still here arguing while his wife is in labor...take it for what it is..

I would be in trouble if I was taking time away from her. I was her coach all night while we were trying to go 'all natural'. Unfortunately, things ran too long and there were some complications (water broke at 6am yesterday morning) - so she is on hour 36 and decided to go with an epidural. She's sleeping soundly right now and the best I can do for her is let her sleep.
I should sleep myself but I'm a little too excited to meet my first born. We don't know whether it's a boy or girl so it's pretty exciting

There was a time in my life when I had to be right about everything. Damn near killed me. A dear friend showed me perspective, and my world is a way better place. You have a wife, soon to have a child, and you are worried about the temperature of someone else's brisket?
It's cooking. Turn up the temp if you need it done sooner.

I know I am a late comer on this thread, and am only 5-6 posts deep into 75 or something but you are arguing agaisnt 3 of the most experienced Eggers here, Wessb, Fidel, and TNW. They have cooked a combined total of about xxx,xxx more briskets than you.
Dude, get over yourself. Shut the frack up and learn something so at some point you can pass along some solid advice which you are obvioulsy lacking right now. -
