butts

I have 2 large butts, 1- 9.9 lbs and 1- 8.7 lbs.
how long will it take doing a lo and slow at around 225-250 deg.

    15-20 hours, a little shorter maybe if you go at 250 the whole way. At about 12 hours start checking the internal temp and take out at around 190-195. Leave wrapped in aluminum foil for an hour or so, then pull. A nice rub (dizzydust, for example) and its all you really need.

    The last one's i did were about 5lbs and took 17 Hrs., I will increase the temp this time.

    I agree with The Virginian 100%[p]When I wrap pork, I put 1/2 cup apple juice/AC Vinegar mix in the bottom of the pan.

    I did two 8 lb butts last night and they took 13 hours at 225. I did one 4.5 lb butt last week and it took 11 hours at 225. I would generally plan on around 2 hours/pound but considering what happened last night I would keep my eye on the temp starting at 1.5 hours/pound just to be safe.

    Time's are not the issues. Internal temps are. 195-200 is the answer. I've have had butts take 15, 20, 25 hours. The answer is patience, and waiting until the internal temp is reached.

    I put them on my large egg at 8:00, The temp has stabled at 250. I will keep a check on it for awhile. Thanks for the info.
