<p />Haven’t posted anything for some time. Thought I’d throw out a picture. This was a cook over the Labor Day weekend. Yum! S-N-M!

    Well, I started a large load of lump around 10:30 Sat. morning. As it reached about 300¢ª I set the Damper and wheel to target 225¢ª. I¡¯ve done this enough times I can set it within a few degrees. My target temp, as I call it, was 225¢ª. It varied between 225¢ª and 250¢ª throughout the day. Around 11:30 pm, I added a large scoop of lump. Put the remote in the dome for dome temp and went to bed. I set the alarm for less than 200¢ª. The Alarm went off at 6:10 Sunday morning. I just rolled over and went back to sleep. Took it off and pulled it around 10:30. S-N-M!
