I did this a while back. Cut a deep pocket in the breast, stuff in a sage leaf or two, serrano, wastphailian or procuito ham and swiss or gruyere cheese. Close the hole with a toothpick and dip breast in flour, egg wash and breadcrumbs. After sauteeing both sides cook on the egg til just about done, top with a slice of the cheese
