CI Lamb Chops/the best

My best chops yet. Costco lamb chops, fresh tyme, basil, rosemary, olive oil s&p to taste. Chopped and made paste with herbs and oil and applied to both sides of the chops two hours before cook. Got the fire ready to 400 and placed my CI skillet over direct heat to get good and hot. Placed chops in pan till the internal temp got to 115 removed chops to rest. removed pan from Egg. poured 8 oz of decent red wine in pan to deglaze, finished with 1/3 stick of butter, poured over chops. Easy and GREAT. This is a never miss cook, even the non-lamb eatters like these. (you may want to grill direct but you need the pan drip'ns.)
