As suggested by UnConundrum, I used the TRex method for my whole beef tenderloin last night. It will be the only way I cook a steak from now on! The whole filet was devoured by the house guests, it rivaled any steak house experience any guest had. Thanks again!

Can you tell us how long you did the sear and dwell for a whole tenderloin? Sounds awfully tempting to try it that way.

90 seconds each side for the sear, rested for bout 20 minutes inside, back to the egg and cooked at 500 degress for bout 5 min. each side, delicious!

trout16, can you provide more details on the size of your meat, its thickness, etc.? I LOVE the T-Rex method on steaks, but I want to make sure I make properly apply it to your idea. Thanks.

It was slighty larger than a chateaubriand cut if you are familiar. I would say bout 4 1/2 inches wide, close to a foot long, and bout 3" high. Very good!

I would say a petite whole tenderloin or large chateaubriand lol! I did cut the tail end off so it wasn't well done. Thanks again for sharing the technique, brought plenty of smiles and full bellies. I will also add that it was a very generous 90 sec so that could border to 120 but not that much more.
