So, yesterday I picked 3 gallons of blackberries and I have plans to make some bb wine. I have a great uncles recipe to go by, but he isnt very clear as to what kind of container setup to use. Several of the online guides talk about using the air tight stopper in the top that will allow c02 to escape but not allow 02 in. This seems to be a consistent theme throughout different websites. However, my uncles recipes says to stir twice a day for 9 days, is it possible that he removed the top to stir or would that ruin the process in principle? He does say to use an 18 gallon container, for what I assume will be about a 15 gallon yield. I am just not sure if I am going for airtight when selecting my 18 gallon container.

Thoughts or questions would be appreciated...
