I'm doing 2 butts (9lbs each) and 2 briskets (5lbs each) together on the XL tonight for the first time. Anything specific I should look out for?
Thanks for the tips in advance.

When you can spin a fork in a circle in the brisket it is probably done. I like to take mine and wrap it in a foil pan with about a cup of beef broth poured over it. Seal and cook or place in a cooler wrapped in a towel for an additional 1 to 3 hours. The brisket soaks up the broth and makes it extra moist. Either way it will be really good.

Good to know. Thanks.
