Maverick ET-73 vs. Egg thermometer

So we hooked up the Maverick ET-73 for the first time and are cooking a pork butt. Trouble is, the temp on the gauge built into the egg is showing a steady 225 but the Maverick is registering 240 at the moment, though it moved around a bit overnight. It seems VERY sensitive and we can't get it to match the egg thermometer. We have the Maverick hanging inside down through the daisy grate at the top.

What are we doing wrong? How can we get the 2 temps to match? Or, which one should we believe?

  • The analogue egg thermometer is likely mis-calibrated - only way to check for sure would be to put it in boiling water to see how they do - and recalibrate if necessary.

    in my experience, a butt should be cooked at 250. Regardless a 15 degree difference in the context of cooking a pig shoulder is inconsequential.

    Pull your dome thermometer out and check it in some boiling water, should read around 212. If it does, put it back in and boost the dome temp to 250. If it doesn't, adjust the nut on the back until it does. -RP

    the egg is usually hotter up top with an indirect setup but checking in boiling water wouldnt hurt. 250 dome is a better temp to cook at because if you put your maverick down on the grid level you may find your actually cooking at 200 at that level with a dome temp of 225.

    It sounds to me like you are close enough for now to finish your butt cook. I would go with the dome probe and shoot for 250° and finish that bugger up.

    Later when you get around to it start a pot of water boiling and compare the boiling water and the dome probe and the et-73 (it's not adjustable) and your thermapen if you have one. If you do take pic's and post your findings. Tim ;) I'm sure your butt will be fine. ;)

    Calibrating the dome thermometer has been discussed above.

    Some of this will depend on where you clip the Maverick probe. If you clip the Maverick probe on the dome thermometer you still may not get the 'exact' same temperature. Make sure you clip above the read point (tip - below indent) of the dome thermometer. I would think the closer the Maverick prove is to the dome the hotter the reading will be.

    If I am doing a long cook I will be using the Stoker or DigiQ with the Maverick. Even if I clip all probes to the dome thermometer I don't think I have ever had any of the three (egg, digiQ or Maverick) agree with one another. I just remember the difference between Maverick and what ever other device I trust most and use that as a guide.
