Stuffed breasts, corn and mushroom risotto

This turned out to be a very tasty meal!

I stuffed chicken breasts with aged provolone, ham and pesto sauce and grilled them, along with some corn. I added a chunk of pecan for flavor.

To complete the dinner, I made some mushroom risotto. I made a mushroom stock from dried mushrooms and then sauteed some shiitake mushrooms to add at the end, along with grated Parmesan. This was a keeper!
