Tips for new owner--Brisket and Temp

Wife gave me a XL BGE for my birthday and it is frickin awesome. Only issue is no one has the XL plate setter in stock and I was thinking about doing a brisket for July 4th, can I put the coals on one side and smoke the brisket or should I come up with another plan?? What about ribs, do those need a plate setter to be done properly as well??
Also, I am really good at getting the Egg up to 800 degrees but haven't really figured out to get it to 225 and staying there, any tips? Also open to any other tips or links to good forum posts for new owners.

Does your dealer have replacement cooking grids in stock?
You could put some sort of barrier on the grid, like a terra cotta plant base lined with foil doubling as drip pan. Then second grid on top of that. You could also use a round weber grid from Home Depot... -
You could buy the raised grid for the XL (you'll use it eventually anyway) Put a pizza stone on the main grid with a drip pan on top of it. The the raised grid and your brisket.

great idea, might also use foiled lined bricks between terra cotta and grid to get more air around. Thanks for the great idea.

Also thanks for this idea, the dealer doesn't have the grill extender but I have ordered one for later. -
What about the grid extender for the large, it just clips on the grate and could work on the XL.

I haven't done a manual smoke in the XL in a long time since I got my DigiQ, but I think I kept the daisy wheel "petals" open and the bottom vent just about 1/2 in open. That kept it around 250, I had to tweak it from there.

Congratulations and welcome to the forum.
Take a look at the Ceramic Grills Store, Egg Accessories member tjv has developed a lot of useful accessories for the egg. This won't help for this weekend but there are some fun toys there.
