beef brisket

Going to visit my father this weekend. He wants to cook a beef brisket for 1 hour a pound then foil place in a cooler for 1 hour a pound. What are your thoughts?

I think you need to cook it slightly hotter than normal and get it to 195 or so before you put it in the cooler. I would only rest it for a max of 4 hours and not much longer (food safety issues).

I think you should make reservations for 4 at the closest emergency room, prior to eating.
