OK, a call out there to the BGE experts. I'm going to do my first overnite butt (boston butt that is). We're having 20 or so people over at about 5:00. What time should I start it tonight. I staring at the egg now and it's calling my name. Too early?

msbrennan,[p]Clarification, this is for tomorrow, Sunday, at 5:00 pm.
    Thanks.

  • msbrennan,
I would start it sometime around 8 or 9pm. You will have plenty of time. If it is done early, rap it in foil and put it in a cooler. I will pull fine.
    240 dome, 195 internal.
My last cook, two butts on the Egg too 16 hours and 39 minutes.[p]MMM MMM Good[p]Jerry

msbrennan,[p]got up at 6 a.m. to check everything out. the fire is still going and the temp, which I thought was stabilized at about 225-240 was up to about 265. the butt was reading an internal temp of 205 so i yanked it off, wrapped it in foil and a towel. any other thoughts? am i ok or screwed?

    msbrennan,
Good News! You (your butt) is fine. Keep it in a cooler wrapped in a towel. This will keep it warm & moist. Maybe about an hour before you want to eat you could put the foil wrapped butt into a 170* preheated oven for 30 minutes and pull it apart and enjoy. Some others may have other ideas, but I had a butt finish quick on me once when my temp got away and jumped up that night and I did this and it worked great. Good Luck & enjoy the friuts (uh, I mean meat) of your labor! Joe
