How do most cut the Jalpenos...into two round cylinders or length wise?

Deetwood,
matter of preference really but lengthwise is most common.
Sometimes I'll just remove the end where stem is and cook them standing up in a jalapeno holder, today I 1/2'ed them and removed the white membranes so they are not toooo hot.

Deetwood,
Probably too late with my answer, getting yardwork done here....I only cut the stem end off. I use a vegetable peeler & a paring knife or a skinny fillet knife to core it out. I've even used a dental pick that's got an 's' curve of sorts on one end to reach in deep when needed. I know, a bit of overkill, but...some of my guests don't appreciate the heat as much as I do so I make some milder versions by getting as much out as I can.
