My first attempt at doing a butt is a 3.5 lb. butt. No overnight cook first time around. At 220* to 240*, how long should this take? Does the 2 hrs. per lb. still hold true on one this small? Thanks, Jim.

jbrodie,[p]That was about the size of my first one, which was boneless. It was barely finished after 10 hours in the cooking temp range you're thinking of, with no opening the Egg to peek or baste. [p]Each roast is different, but I'd say plan on 10 hours. If it's done earlier, you can keep it warm in any of several ways. [p]If you don't have a Guru, a remote reading thermometer like a Poulder will allow you to avoid opening the Egg to measure the temp. This is important because each time you open the Egg on a low/slow cook, I'm guessing you probably add at least another 15-20 minutes to the total cooking time. Make sure your thermometers are calibrated before you start cooking.[p]Bob
