Tri-Tip Roast...

Picked up a 3lb Tri-Tip roast today. What is your favorite way to egg one of these bad boys up?

    325-350 until internal is 125-130 for medium rare. Let sit for 15 minutes-cut and enjoy. Short cook.

    I coat it with a hearty rub then sear it on all sides at about 700*. While the cooker is coming down to 300*, put the TriTip on a rack with a drip pan with about half a beer in the pan. Cook at 300* until you have an internal temp of 130-135*. Take off the cooker and let it rest in foil for about 15-20 minutes, slice thin. [p]I've made several of these now.... great dinners, even better breakfast the following day...!

    I did 2 of those within the last week. Not quite 3 lbs, but close. I applied a wet rub of Dizzy Pig Cowlick, Chef pauls blackened steak seasoning, a touch of olive oil and a splash of Stubbs beef marinade. Let sit for 4 hours...wish I could have had longer but they were still great. [p]I T-rexed them for 2 mins. per side at 750-ish, let the Egg come down to 425 and did 7-8 mins per side for rare.
    Outstanding!
    Made killer sanwiches on grilled french bread with mayo and horseradish.
