I cooked some'en:Shrimps scampi w/ linguini

Nice and easy dish with great flavors from Tyler Florence.
Ingredients

* 1 pound linguini
* 4 tablespoons butter
* 4 tablespoons extra-virgin olive oil, plus more for drizzling
* 2 shallots, finely diced
* 2 cloves garlic, minced
* Pinch red pepper flakes, optional
* 1 pound shrimp, peeled and deveined
* Kosher salt and freshly ground black pepper
* 1/2 cup dry white wine
* Juice of 1 lemon
* 1/4 cup finely chopped parsley leaves

Directions

For the pasta, put a large pot of water on the stove to boil. When it has come to the boil, add a couple of tablespoons of salt and the linguini. Stir to make sure the pasta separates; cover. When the water returns to a boil, cook for about 6 to 8 minutes or until the pasta is not quite done. Drain the pasta.

Meanwhile, in a large skillet, melt 2 tablespoons butter in 2 tablespoons olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes. Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes. Remove the shrimp from the pan; set aside and keep warm. Add wine and lemon juice and bring to a boil. Add 2 tablespoons butter and 2 tablespoons oil. When the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately.

Miced up my garlic and shallots and cooked well for the wife then added the shrimp till nice and light pink.

The only thing different from the recipe I did was a strip of pepper bacon to add a little richness which to me made the dish.

After the wine, butter and starch water reduced a bit added shrimp back and the linguini and briefly mixed.

On trick I did was as soon as I removed the finnal dish from the Egg, even though I pulled the noodles just a min. early, was totake the water hose and spray the bottom of the wok till it was touchable to keep from over cooking the noodles. My buddy who has beat cancer 2x and is now cancer free pulled up on his rocket about the time I was putting the shrimp in. Must have had a camera watching! ;)

    Looks great, but remember me from OKC? I'm allergic to seafood :( But your stir fry with the nuts was super. How is you kitty doing? I hope she is feeling better.

    JL...The cook looks great, as they always do!! Good to see Jake in full feathers, and well mannered at the table as always!! I hope Li'l Bit is doing better. Dealing with a 13 y/o diabetic cat (2 insulin shots a day)....trust me, I know how it is!! They really do become part of the family!! Hope it all works out for you....my heart still breaks losing your canine companion.

    Your cooks are such an inspiration. Love what you do! Shrimp Scampi is one of my favorites, so now I need to try it on the BGE.

    That looks really good. I think I am going to have to do that tomorrow and add a few scallops to the mix.

    I like the idea of adding the bacon.

    We love stir fry and your noodle and shrimp scampi in the wok has got me hungry and I like the bacon idea. What I might do is add some green pepper and a touch of Cajun seasoning with the addition of bacon.

    Well I had a lot typed out but like Main Egg was saying the other day I lost it trying to post. The short is she ate some of her food free choice last night and again this morning!! First time in 5 days I have not had to force feed her and is much more allert and active. Still has a LONG way to go and she may be far worse this afternoon but I'll take what I can get now days! Thanks so much for all your concerns and prayers. Got a full day. Think we are going to take a 3 or 4 hour ride out of town just to get away from it a bit. :whistle:

    We rode 188 miles round trip today and now we are toasted. We had a Softail friend with us today and we egged some plain old burgers when we got back. Man were they good. I hope kitty is on the mend. Tim :)
