cooked them indirect at 250 for 3 hours and finished direct at 325 for about 45 minutes.

    Good looking wings. I see you have been to the cgs. I love my ar. I recently got a CI grid for my spider so now I sear down low at 400° dome then put the ar in and finish off the cook. Lickety split. B)

    I've never cooked wings - not ever. Well, unless they were still attached to the chicken. But nearly 4 hours? For wings? I would have thought 20-30 minutes tops. Like I would do a spatched whole chicken, 375°, raised direct. Maybe flip 'em once or twice. Curious as to why you went indirect and at such a low temp.

    Don't get me wrong, they look great! Just trying to understand - in case I ever DO cook wings. :)

    I hate it when I go to the kitchen for food and all I find are ingredients!

    the skin is nice and firm and almost crisp. i can pick one up and it hold completely together in perfect form. you can dip them, toss them, whatever, but when you put them in your mouth, the entire amount of meat will come off at one time, clean from the bone, perfectly tender and moist.....


    now i'm hungry again. good thing i've got leftovers........

    I grill mine 400° raised. Just keep an eye on them. I love them with crispy skin. :P

    i'm going to dig the AR. i just got a small ci grid last week. i justified by being able to use it on my small egg as well. had to have it since i got the small.....

    nice way to break in the Rig. Just one note, it's best to have the crossbar hangers point down. This way they will catch should they move. Enjoy and thanks for posting......t

    duly noted. i thought i checked for that. it worked awesome. super easy to pull the rig out and remove the oval stone to finish them direct.
