I'm a newbie...this was my 3rd cook on my large BGE. Bacon wrapped filets. Thanks no part to me, they turned out quite tasty. I was attempting to follow the basic formula of 650 deg, sear 2-3 minutes per side, shut her down, cook to temp. I started the fire with left over lump. I added a little fresh lump but I was being stingy because I wanted to make sure I left enough for an pork butt tomorrow. That was my first mistake. There just were not enough coals burning to get up to temp...peaked out around 500. I went with that and seared a little over 3 minutes per side, then shut her down for about 4-5 minutes. I checked the meat temp using an instant read and it was only about 101, so I opened up the vents a little and let her warm back up. Meat temp reached 130 in another 4-5 minutes.

Oh yes, I soaked some hickory and cherry chips in red wine and water. I forgot to add them before I put on the beef, so I just fed them in through the top during the cook. Yes, it did burn the hair off my hand and forearm but I had to take one for the team.

Even with all the mistakes, I swear it was one of the best dang steaks I have ever had. The family agreed. Nobody even thought about asking for any steak sauce (and my kids are known for drowning a fine cut of beef in a1). The smoke flavor was just perfect in my humble opinion.

I would like to give a shout out to the Butcher's Block in Woodstock, GA for some fine beef.

    That sounds great! Can you tell me more about you wood chip soaking tehnique? Can I use box wine to soak my wood chips?
