Would you sear eye of round or not?

My grill is heating up, and I cant decide whether or not to sear? Your thoughts? Thanks, Scott

Borders,[p]Sear it like crazy. 5-10 min per side and move it around. I assume it is real thick - sear it all over and then "dwell" it to the doneness you want. 130-140° internal should be pretty good sliced real thin.[p]Tim

Tim M, thanks for getting me off the fence,

Borders,[p]I agree with Tim - whatever you do, don't cook this cut of meat slowly - that's the mistake I made the first time I bought an eye of round, and it was like eating a smoked tire.[p]Good luck![p]TRex

TRex, gracias. Will do, Scott
