I have been wanting to try this. My brother’s family and mine are leaving for the Silver Lake Dunes this weekend. We wanted to treat our friends up there to some slow cooked meat. I put two pork shoulders and a brisket on at the same time. I wonder how they will turn out?

Should be fine. Keep it closed and start checking when the brisket gets to 185 or so. Looks great.

Pulled them off the grill later this morning and place in cooler for two hours, They both taste great.
