Thanks everyone, who helped me through my first butt cook. You know who you are. It went very well and turned out great! My fire was pretty consistent for about 15 hours. My plateau lasted 6 hours. When I finally opened the dome to see the finished product I was so happy I cried. When I regained my composure, I handed out cigars. It was the best pulled pork I've made so far!!
