Emergency help: Sea Bass

Anyone have a quick and very easy recipe? Friends will be here in an hour, and I had no clue they were coming! Please help! Thanks.

    This will adapt to theBGE easily.

    Sea Bass, Cuban Style

    "Sea bass cooked in tomato, onion, caper, and white wine sauce. Great served with rice pilaf."


    INGREDIENTS:
    2 Tbs extra virgin olive
    oil
    1 1/2 cups thinly sliced white
    onions
    2 Tbs minced garlic
    4 cups seeded, chopped plum
    tomatoes
    1 1/2 cups dry white wine 2/3 cup sliced stuffed green
    olives
    1/4 cup drained capers
    1/8 tsp red pepper flakes
    4 (6 ounce) fillets sea bass
    2 Tbs butter
    1/4 cup chopped fresh cilantro




    DIRECTIONS:
    1 Heat oil in a large skillet over medium heat. Saute onions until soft. Stir in garlic, and saute about 1 minute. Add tomatoes, and cook until they begin to soften. Stir in wine, olives, capers, and red pepper flakes. Heat to a simmer.
    2 Place sea bass into sauce. Cover, and gently simmer for 10 to 12 minutes, or until fish flakes easily with a fork. Transfer fish to a serving plate, and keep warm.
    3 Increase the heat, and add butter to sauce. Simmer until the sauce thickens. Stir in cilantro. Serve sauce over fish.

    Cooking time: 45 minutes

    Brush it lightly with mayonaise....add a light coating of your favorite rub....grill it direct, about 2 minutes a side. If it is sticking, leave it! Let the fish tell you when to flip! Don't panic...you've got it. (and if you really feel uneasy, use some foil, but its really not necessary) If you use foil, just use some butter...no mayo.

    Seabass is really easy to cook. Here's how I cook it.

    Marinate the seabass in a little olive oil, garlic, chopped parsley, and a tad bit of salt for about 15-20 mins.

    Then put it on the grill (since I'm new to the egg I'm not sure what temperature you would put it on, but I use the lowest flame on my gas grill). I have full intentions of trying on the egg as soon as Fresh Market has a sale.

    Baste with cracked sea salt and lemon juice every 5 minutes for a total of 20 minutes. You won't be disappointed. Its done when you start to see large flakes.

    Sea bass has its own wonderful, rich flavor so you don't really need to do much with it.
