Chicken & Veggie Tortillas & Roasted Peppers Sauce

I had some leftover egged roasted chicken and decided to make some Chicken & Vegetable tortillas with roasted peppers & lime sauce.
Most of the ingredients:

Roasted some sweet red peppers and jalapenos:

Roasted some corn and asparagus:

Sautéed some onions, garlic, zucchini , and yellow pepper and added it to the grilled veggies.
To make the sauce I peeled the roasted red and jalapeño peppers and placed in a blender with sour cream, lime juice, and cilantro. (Wasn’t hot enough initially, so I roasted more jalapenos and added them):

Combined some of the roasted pepper sauce with the shredded roasted chicken, black beans, and veggie mixture. Reserved the rest of the sauce to use on the plated tortillas:

Buttered one surface of each tortilla (so they wouldn’t get soggy from the moist mixture) and placed the chicken & veggie mixture on top and added some cheese. Did the same to a second layer and added some cheese on the top:

Heated at 400 degrees on parchment until cheese melted and heated through:

Plated with vinegarette salad:

Now that looks deeelicious...I will have to go to the Food Court and get some mexican food...but it will not be near as good as yours...nice pics

Kim, part of the inspiration was seeing your delicious roasted corn! After removing it from the ears I had to eat some before adding it to the mix. It was good.

That is not Italian! Looks great. Are you using that small quite a bit?

Mike,this was the first time (other than keeping things warm), but I regret that I didn't use the XLG. I could have roasted all the veggies at once, and sauteed the onions and zucchini at the same time, and could have better manuevered the 10 inch tortillas.
I'll post a pic of my first small cook with my GrateMates present. I just did their second seasoning yesterday. I look forward to using them......would have helped with this cook with the tortillas being level with the egg rim.
Been cooking quite a bit of pasta and other Italian dishes lately....time to move on to other cuisines, lol. -
WOW Becca!!! That looks amazing. Really good camra work to boot. Do you have time to grow a small garden at all? I know you have to stay wrapped up and hard to find the time.

JL, I used to grow tomoatoes, but the squirrels taunted me by picking them just before they were ripe, took one bite, them put them on my fence for me to see. Torture. I wanted to buy a gun soooooooo bad. :evil:
Now I just have an herb garden. Fortunately, my sister has a very nice garden and keeps me supplied. So instead of fruits and vegetables, I tend my flowers. -

Thanks Julie, now get back to work!!!! I'm on vacation, so I'm allowed to dwaddle on the forum in between doing some odds and ends. However, that being said, at this rate, I will never get anything accomplished.
I just thought, you could easily of made this recipe with all veggies for your class. -

Jon, your bathtub comment reminded me of living in Denver. While my Aussie friend and I were gorging on about a dozen very ripe Western Slope peaches, she said, "You know, there is only one proper way to eat a peach...... that's naked in the bathtub."

She was partial to pairing peaches with champagne as well.
We use to eat boxes of Colorado Western Slope peaches, lol. Sure miss those peaches. Now my niece brings me peaches from Georgia and South Carolina. -

I think those peaches would taste better eaten that way.They are that good! We drive over there every year and get peaches and wine.We put up about a half a bushel in the freezer every year.Yum!
