More of a video test. ribs were good. Dry seasoned and no spraying during the cook.

I tried a high temp cook for spares after taking a class where Mike Davis recommended doing them at 300f. No surprise, I over cooked them (fall off the bone). I need to try it again and do it right.
What did you think of your results, taste and texture wise?Knoxville, TN

They come out fine. They come out soft enough. I like a little pull on the ribs. Sometime the fall off the bone ribs are overcooked and mush.

R.. got a Kodak Play-Sport. shoots pretty good vids. I want to start doing a little of that. I can even shoot up to 10 feet under water. If I can find magnesium lump, I can cook on the mini in the pool.
