London broil as lean "tacos al pastor"
Prof Dan
Posts: 339
There is this taco thing called tacos al pastor -- it is bits of charred beef, chopped up. So I faked it with London broil [very lean stuff]. When it was still half-frozen, I sliced it up into thin strips. I marinated it for a few hours in Mexican spices -- chopped onion, garlic, oregano, cumin, chili powder, salt, a little olive oil, a little wine, and salsa. [Cilantro would have been good -- didn't have it.][p]I got the Egg up to 500 and stir fried these beef strips on my grill topper for about seven minutes or so, till they looked semi-charred. [There is not enough fat for them to char really well, but close enough.] Most of the time the Egg was open, so I could stir it.[p]When it was done, I took the strips off and chopped them into small chunks. We served them with rice, beans, salsa, and guacamole, and wrapped it all up in lettuce leaves. Tortillas would have been better, but lettuce is okay.[p]The London broil was surprisingly tender -- I expected it to be tough.
This is not quite like carne asada, which is skirt steak or flap steak sliced really thin before cooking. But it was pretty authentically Mexican-tasting.

Prof Dan,
Tacos al pastor....now there's a treat. One of our favorites when we go to Mexico. Find a little joint that's away from the tourist area, no English spoken, very few Americans in sight...Happiness! They slice off small pieces of meat(off a big rotisserie), a nice slice of pineapple, some cilantro, onions, and??? all on a fresh tortilla...add some hot sauce, guac, and life is good! Dos Equis or a Coke..dinner for about $3. [p]My mouth is watering.[p]Mike in MN
