Fast Food?
Yesterday at 3pm I fired up the lrg. BGE got things stabalized at 215 pit temp. At 4pm I put on an 11 lb packer brisket and two 6lb butts (butts were on raised grill over brisket). Hooked up Guru sensor on grill at brisket level, stuck Guru temp probe in a butt. Stuck dual sensor Polder in brisket. Polder and Guru in agreement about pit temp. 215f. Checked things at 11:30pm A-OK. 4:30am, got up to take a whiz. Pit at 215f, brisket 170f internal. 7:30am Guru is chirping. Butts at 190f, brisket at 195f. The butts I can believe, but a 12lb packer brisket in 15 1/2 hrs? Double wrwpped in foil, put in oven at 170f until 4:30pm. Pork pulled great, brisket flat a little dry, brisket point, TO DIE FOR!! An thoughts on this "Speed Cook"?
