Visited this restaurant that serves all-you-can-grill appetizers featuring a live charcoal fire at the table …the skewed fish, shrimps, chicken, lamb, paneer, vege (pork and beef are no-no in most main stream restaurants there) are pre cooked 80-90%, you brush on the marinade/sauce of choice and complete the cook at the table…

soy sauce manufacture using technique that's perhaps 100-year old - naturally fermented and aged in the sun for months, chemical and preservative free.

Started with soy beans in dark room …

Followed by months of fermentation/aging in the sun …

Thanks for sharing I enjoyed looking at them. Tim :)
  • International travel is one of the finest pleasures in life. I've never been to India - whenever I hear stories about India trip it's always either the BEST trip anyone has taken or the ABSOLUTE worst. I think the latter is due to getting 'New Delhi Belly' on a long bus trip. That can ruin any trip.

I hope you brought back some authentic curries. I expect to see an Egged Naan tutorial from you relatively soon :).

Tweev, you're right about that, fortunately I didn't get the belly because it was an extremely short trip and we rented a private car. Authentic curry is like a lost art these days, traditionally there was no such thing as curry powder. Real curry involves roasting and grinding fresh ingredients into paste.

Thanks Larry, it was great indeed but 10-day was too short, we couldn't stay longer due to work commitments. Happy fathers day and see you at NiEGGara!

Gary: Looks like a fascinating trip! I hope you tried lots of their local foods, and also hope you returned to the States with some of their amazing Saffron!! My Mother did some homeopathic volunteer work over there and brought some saffron back for me, and it is truly the best! Looks like a great, and culturally awakening trip.
  • True. I've made curry from scratch a few times and it certainly is wonderful. Now, with time being the premium that it is I use Pataks curry paste. I find that to be much better than powder and really quite good.

LC, yes it was a great trip but too short, only 10 days. This trip is indeed culturally awakening for my son (first visit). In case you don't know I was born and grew up in Calcutta, my father and a sibling still live there. That sauce factory is our family's.

Gary: I had no idea you grew up in India. I will take a trip there some day (kinda like my 'bucket list'). I want to experience the incredible spice shops, the local markets, and the local food. I love that kind of thing! I dabble in Indian cooking at times, and will some day experience the 'real deal'. Thanks for sharing.
