I lit the lump and getting to temp.

What is the best way to get to Temp ? Lower vent opened slightly and Upper vent open more or visa versa ?

Would like to know how other XL owners do it.

Thanks.

Gary

Are you shooting for direct or indirect temps?

On indirect with the XL, I would start the fire in the middle and get it going(top and bottom vents completely open with the lid open). Once the coals are lit and the cube is gone, close the dome and see where you are temp wise (it may be higher than your target and that is OK). At that point, put the platesetter on and let it settle for a few minutes. The temps will initially drop because of the cold platesetter and the fact that you are indirect.

You will see the temp continue to climb and you can start closing the top and bottom down accordingly. The setting will be according to your brand of lump and heat desired, just play with it. If you get a bit hot, don't worry, close it slightly and realize your meat may get done a bit sooner.
