Seafood Sat. night

Costco had some beautiful Pacific prawns & scallops in their Seafood Show yesterday, couldn't resist. Took a tip from Steven Raichlen's cookbook and soaked the shrimp in a little sugar water for a 1/2 an hour after shelling & deveining. They were previously frozen and the soaking is supposed to rehydrate them, seem to work. Wrapped the scallops in pancetta. Also stole an idea from someone's board post the other day, sorry I don't remember who! Took a large slice of a Vidalia onion, spread it w/La Bomba and topped with fresh Buffalo mozzarella.

Makings for the basting sauce, butter, evoo, garlic, red pepper flakes, fresh basil and a little salt.

Put the onion on early along w/some asparagus. Then upped the temp a bit and grilled seafood, basting with the butter sauce.

Served with gemelli that was cooked in evoo, garlic, parmesan and more basil. VERY tasty meal!
