How Long do I smoke a 7 lb brisket
Lumpy Joe
Posts: 11
Hey there / everyone was helpful with my "sweaty grill" issue (and now it's solved)...so on to my next question.
I've only done one brisket before...how long do a I smoke a brisket? I think i've seen a big green egg video that was 12 hours at 200 or so...I have a 6.5 lb brisket I'm doing for father's day tomorrow. Thanks for the advice in advance! Joe

The general rule is 1.5 - 2 hours per pound, although temperature is your ultimate guide.
-
kick the dome temp up to 250 degs and it will take 1 - 2 hours per pound. you ant an internal temp of at least 195. At that temp you should be able to twist a fork in the meat easily.
-
would you suggest 225 or 250 or other in terms of degrees?
-
Aim for a dome temp of 250, which puts the grate where the food is around 225. 250 dome is about the lowest temp the Egg can maintain well.
