Does anyone have a good, and I mean GOOOOOOOD, vanilla mousse recipe or white chocolate ganace recipe?

Making a cake for my wife's birthday this weekend. And wouldn't you know it, it's on father's day.

    Here is one that might work.

    Dessert, Mousse, White Chocolate, W/Raspberry Sauce


    INGREDIENTS:
    1 Cup Sugar, Granulated
    1/4 Cup Water, Cold
    1/4 Cup Sugar, Confectioner's
    3 Egg Whites, Unbeaten
    1 Pint Cream, Whipping, Fresh
    1/2 Lb. Chocolate, White, Compound Coating
    1/3 Cup Cream, Heavy
    1 Envelope Gelatin, Unflavored
    1/3 Cup Water
    Raspberry Sauce*
    Dark Chocolate Shavings For Garnish




    Procedure:
    1 Mix sugar with 1/4 cup cold water, bring to a boil. Remove from heat, cool slightly (keep warm enough to aid in expansion of egg whites). Add confectioner's sugar and egg whites, whip in mixer at high speed until mixture peaks. Refrigerate. When mousse mixture cools, beat 1 pint whipping cream and fold into mixture. Shave white chocolate, and heat on low temperature in saucepan with 1/3 cup heavy cream until chocolate is smoothly melted, reserve.
    2 Mix gelatin with 1/3 cup water, bring to boiling point. Let cool slightly and fold into melted chocolate. Fold this mixture into whipped cream and egg white mixture. Cool in refrigerator.
    3 To serve, either pipe out portion or ladle with ice cream scoop. Top with raspberry sauce and shavings of dark chocolate for garnish.
    *****Raspberry Sauce****
    1 Mix together 10-ounce package frozen raspberries and 10 ounces canned raspberries with juice. Heat together. Add 1 tablespoon apricot brandy and 1 tablespoon honey. Heat until blended. Let cool. Puree in blender.


    Yield: 10-12 Servings
