    jebbia,

I find it a good idea to put them in the microwave first just to start the cheese melting. They will stay together on the egg when you flip that way.

I go for simple too. I made steak and cheese quesadillas last night on the mini. Its my favorite fast cook with left over meat.

I used to get the lawry's guac mix (Which is great) but now I will only use it if I have a bunch of guac to make. Other than that its all home made

    ripe avacado
cut it in half and remove pit
cut light slices down the flesh of the fruit longways, then sideways, a checkerboard pattern forms
Scoop out with a spoon into a bowl
Add cut up onion (I prefer sweet) and tomato (I prefer just flesh, not seeds and ribs)
Mix in freshly crushed/diced/minced/whatevered garlic to taste
Stir it up and season to taste
I put in ancho or chipotle chili powder, cayenne, cumin (a lot!), some pepper, cilantro flakes cause the wife is allergic to it so I just put a little in), some white pepper sometimes, and lots of kosher salt.

I will top it off with fresh squeezed lime, mix and add salt and lime to taste. If I want spicy and have them I will add seeded jalapenos or whatever.

Excuse the typos, spellcheck applet doesn't work at work and im feeling lazy.
