Tri-tip & T-Rex

We're going to do a tri-tip roast, and it seems to me like T-Rex would be the way to go. Thoughts and opinions?[p]TIA[p]Ken

    This is how I do it - but I am certain the T-Rex way would be great too:[p]Coat with rub of choice - I like something with a kick to it. Then sear all sides about 1-2 minutes at 600-700*. I then put the TriTip on a rack with a drip pan filled the pan with beer. Bring the cooker down to about 300* and let her roast until she reaches 135* inside.[p]Take her off the cooker, Wrap her in foil, & let her rest for about 20-30 minutes before slicing. [p]I got this from our good friend C~W - it is delicious! I have a great pic of it - but I have no idea how to show it :) I'll email it to you[p]Kris

    I'm pretty pleased about "we" my own self...[p]Charlie didn't do much of anything here - a few newly planted trees blew over in the wind was about all.[p]Ken

    We only use T-Rex for tri tip and it is always great.
