It's finally done ... well sort of!

This has the be the longest butt cook I can remember. The 4.5-5 pounder went on the egg last night at about 9-9:30 pm. It reached a 163 degree plateau about 11:00 am this morning. I just took it off the egg about 5 minutes ago (5:15 pm). Heck, that's almost 20 hours![p]It never did reached 200 degrees (only 197), but I want to give some time to rest (guests coming at 6:00 pm). You may want to test your temperature gauge by putting the end in boiling water and seeing how close to 212 degrees it comes. Unless you are cooking at a very, very low temp on purpose, it may be that your gauge is reading high. 4 hours per pound! whew, I am sure it was worth the wait. [p]Brett
