Blackened Pork Chops - yum!

I made blackened pork chops for the first time last night and they came out exceptionally well.

Put my griddle insert in and got it very hot, making sure to let it preheat well in a 400f Egg.

Brushed the chops with hot butter and then coated heavily with a cajun rub (click to see my blog post with a recipe for the rub I used). Put them on the hot grilled and gave a splash of butter.

Flip after two minutes and repeat the splash. Watch out for flare ups when you hit with butter :woohoo: :evil:

After two more minutes both sides should be nice and crusted. Switch to an indirect set up and finish the chops to 145f internal.

If you haven't had blackened fish or meat, it is NOT BURNED. There is just charred seasonings on it.

The meat inside was perfectly juicy, it had an intense flavor, and absolutely no burned bitterness.

    Very Nice! :ohmy: I have blackened a lot of fish and I char my steaks, but I have never thought of doing pork that way, saved to my favorites/recipes folder, thanks B)

    Those chops look sooooo good. I must find a griddle! I have an old CI skillet that I've considered modifying (i.e. removing the handle so it will fit on the egg). :P
  • It's pretty easy elzbth - you will find plenty opportunities to use it.
