anyone marinate cherries

last time i tried i researched it and the recipe i choe turned them brown, very unappetizing, i think they were blanched when i did it. how do you keep them red, food coloring needed ? was thinking keep it simple with a simple syrup, maybe a couple vanilla beans and either some jack or rum, mix and cover a few weeks. any one actually make them and they stay red. picked these last night, should have more today and tomorrow before the birds get the rest

    I think you might be referring to the jar of cherries I brought, provided by Bente.

    That "marinade" was just good ole Southern moonshine.

    Yeah, I've done it. Back in the 60's when I was in college, we mixed up a concoction called PJ (Purple Jesus). :) I forget what was in the mix, but it involved grape juice, Wink, maybe some orange juice, probably a few other things... and a bottle of GRAIN ALCOHOL!! :lol::lol: Didn't really notice (or care!) what the cherries looked like - but they were mighty potent!

    Is that what you had in mind? :lol: :evil:

    did they stay cherry red with just the alcohol poured on and where they picked cherries or the jar premarinated kind, ive had those before.

    used to have some great punch recipes back in college. they all started with 7 bottles vodka, 7 bottles rum, 7 bottles grain, 7 bottles madori, 7 bottles..... :laugh:

    You should be ok with just the grain alcohol poured over the cherries. I have never done cherries, and have only seen it at Fidel's house. But have done sliced apples &/or pears whcih works well. I once had 30 year old shine with apples that were still fresh looking.

    back then we didnt need a bge,we could cook off the volcano we built in the front yard over the river walkway we had going thru it ;)

    thanks, i think ill try two, one with straight and the other with a little syrup added to the booze to sweeten it up. :) then see if i can keep them around til the holidays

    walk thru the volcano, up the cascading river on the granite steps and under the waterfall into the house, pigs heads on torch sticks, homemade totem poles in the back yard, two barrels of punch, and a fully refrigerated 22 keg bar with the kegs sitting on rollers, pull an empty out and the next keg rolled into place ;) back then a kid could call budweiser and they delivered to the house, times have changed in not so many years :laugh: college was good, studying not so much :whistle:

    if you can get real shine up there you can do any number of fruits..

    in the past i have gotten peach, cherry, muscadine (which is a southern grape), and apple. i have been looking for the apple pie type. it is made around here somewhere. but i have not found it :whistle:

    but with the cherries i think they mostly do marichino cherries and the add a little of the juice from the jar. i think the problem with real cherries is you would want to deseed them cause the shine will have a harder time getting through the skin. so deseeding them will help two fold ;)

    the ones ive always had were the marichino cherries, they stay red in the grain. the ones i made a couple years ago were bing in cognac, taste good but they turned chocolate brown, im assuming because of the blanch i did in boiling water following a recipe i found. might look at pouring that cognac out of the jar into fresh cherries. somewhere i read the pits add an almond flavor ;) not sure what these cherries are other than they are sweeter than bings, came with the yard, maybe if i slice one side and leave the pits. thanks for the help

    I think those cherries were mostly to blame for the sleepy chair pics.
