I have never done this and have not seen anyone talk about doing this but I am going to buy a butt today, have it cut into inch and a half steaks. Put the probe in the meat, low and slow the butt steaks about 240 and get the internal about 175. I don't know how it will come out, but worth a try. [p]Jerry

Sounds about like country ribs. They should be good. You might want to try them direct so you can slowly build up some crust for flavor.[p]Have fun!

My Sams has them cut up just the way you suggested, and you are right on trck to some good eating. I suggest a little sauce at the end and let it cook in real good. Darn tasty grub there.
