I have never done this and have not seen anyone talk about doing this but I am going to buy a butt today, have it cut into inch and a half steaks. Put the probe in the meat, low and slow the butt steaks about 240 and get the internal about 175. I don't know how it will come out, but worth a try. [p]Jerry
