350 degrees direct heat with raised grid and some apple wood.
One marinated in Mojo:
And the other crusted with lemon pepper inside and out:
I tented both with foil to keep them from getting too dark. I know a lot of folks love that deeeeeeeeep dark brown, but my hubby does not. (The Mojo one could have used a bit more browning, but we were too hungry to wait!!!!)

Coincidentally, I am cooking two spatchcocked birds as I type these words...rubbed w/Rudy's. I'll sauce one just before it comes off and leave the other one plain for making chicken salad.
