I rubbed a butt with the Eggfest Butt Rub, it sat in the fridge for about 20 hours, then I coated it lightly with mustard and let it sit for another 4 hours. My fire had a couple of hickory chucks in it. It cooked at 225 for 18 hours and came out tender and juicy, but it tasted like ham! I know this is not what BBQ should taste like. What happened? Did I cure the thing, like a ham, by putting rub on it and letting it sit in the fridge too long?

    Did you check to see if had been injected with 12%solution? Most of the pork in large grocery stores (at least around here) have already been injected. It does give them a "hammy" taste. Gotta find a good butcher shop or packing house to buy your pork. tatick
