Sorry,[p]This message was supposed to read...[p]I just got in from night bass fishing in Connecticut. The bass were elsewhere but my son and I caught a pair of nice snappper blues. I would ike to smoke these on my BGE when I get back too Old Virginie. Any suggestions as to the best way to do this would be appreciated.[p]Thanks[p]

I LOVE BLUEFISH, but now I'm living in South Carolina and there are none to be had. There is nothing better than slaying a boat load of Blues!
I have never used a BGE for Bluefish.......I just recently bought one. What I would do, though, is smather the fillets in MAYO and then throw on the Egg as you would a salmon fillet (350 for 15 20 minutes)....the MAYO takes out the rich, gaming taste Bluefish has ( you can also cut out the dark vien of meat that runs the length of the fillet, but I don't). I guess if you were to smoke it you would want to cook it at around 225 for around an hour to an hour and a half..........with some Alder or Mesquite. Hope this helps, Paul

ygor, I'd slow smoke with alder, or fruitwoods @ 225 dome temp til firm. It's usually 2-3 hours depending on the filet. Seasoning options are wide open, but the main seasoning is SMOKE.[p]Congrats on the blues,

[p]Thanks guys. This gives me a good idea. I have a sack of applewood chips at home that sound ideal for the task.
