Pearl Bites

I went to Eggtober Fest in Tucker GA last year (2009) and one cook made an appetizer termed Pearl Bites. They were pearl onions wrapped in bacon and were absolutely awesome. I have tried several times and just could not replicate the taste of his Pearl Bites. If anyone knows this recipe I would love to get it. Thanks for any and all help.
