Help....Using recipe from forum that calls for 220 dome. Ive got 18 lbs of butts with Byron's Butt Rub, on grill over pan with 1 inch of water spiked with Jack Daniels.
Guru set on grate between Butts, reads 225, dome reads 300. put them on at 630 pm my time (adt) Planning on finishing tomorrow after work at about 5 pm.
Question is...will it be done before? Dome too hot? should I lower grid temp??
any expert advise would be greatly appreciated. Using large egg.

I clip the Guru's probe to the thermometer stem and set the Guru to 250* and it works fine.

That's a loaded question. It depends. It sounds like you have more than one butt on grill. If they are touching or too close together, they will cook like one 18lbs piece of meat. Otherwise, they will cook like their individual weights. You need to cook to temp and not time. The internal temp should be 195.

Thanks a Million. After all nite cook 11 hrs, pit at 218, food at 178. Pre-bench, Im assuming...there's that word again.
Im thinking another 10-13 hours? -

with an internal of 178, you could bump your dome temps up and finish much faster, at that temp ill raise the dome temp up to 300 if i want them done quicker and it doesn't seem to hurt a thingfukahwee maineyou can lead a fish to water but you can not make him drink it
