CWM Quick Rib report, many pictures

Here we go.
CarWashMike posted a quick rib method and I'm always up for a challenge so I went and gave these ribs a try.
The method is approximately 2 hours of smoking with a bump in heat. Here is the recipe as I know it.
CWM Quick Ribs
Egg at 350 degrees dome, indirect setup, hickory chunks added.
Baby Back Ribs, membrane removed, seasoned.
Place ribs on grill and cook 60 minutes flipping once after 30 min.
Remove ribs and foil. Add apple juice if you like extra moisture. Replace foiled ribs on grill and steam cook 30 min.
Remove ribs from foil. Remove indirect setup for a direct cook. Dome temp will jump up at this time so adjust top vent accordingly. Grill ribs direct about 15 min. to firm and crisp. Mop a sauce at this time if you like your ribs wet being careful not to burn the sauce. Flip often.
Enjoy!
OK, now the pic's.

Meaty baby backs after 30 min. with indirect setup.

I flip and cook for another 30 min.

After 60 min. cooking.

Into the foil.

Back on the grill indirect maintaining 350 dome for 30 min.

Remove foil and remove indirect setup for direct grilling.

Dome temp will jump but don't be alarmed, adjust top vent control at this time.

Grill and sauce ribs around 15 min until crispy at the edges, flipping to prevent burning.

And enjoy!

Wow, those look great! What temp do you want to cook the ribs at during the direct-grilling part? Considering the shorter cook time, do you think this will be your standard cook method when cooking ribs?

Well I was grilling direct around 425 degrees dome to finish the ribs although, ideally, 350 is better . I have a raised grid which helps to prevent burning and by flipping often, about every 4 minutes, I stayed in control. -

The ribs were terrific, very juicy, a nice tug to the meat, flavorful, and ....fast! I dove in with both hands and no chance to take any more pic...I was covered with BBQ sauce. :ohmy: :laugh: -

Just had some ribs, leftovers from yesterday. Yup, mighty good. I'm thinking that this quick method is the way to go for me. Two hours goes by fast but I also have a few 30 minute breaks in the action... I like not being rushed.
Overall it's a great recipe. I'm proof that an old dog can learn new tricks.
I had a good feeling about trying the new recipe, a blast cookin and then the 'bite test' scored high as I thought it would.

This is the way I'm gonna cook baby backs from now on. Short enough to make it easy, long enough to make baby backs lip smacking good.
